What legally counts as “California agave spirits”?

California’s AB 2303 established an unusually clear provenance rule: spirits sold in California using the words “California agave spirits” must be made entirely from agave grown in California and may not contain flavor or coloring additives. That gives consumers a much stronger origin signal than a generic “American-made” claim.

Why California is building real category infrastructure

The category is increasingly supported by more than bottle releases. The California Agave Council maintains grower and distiller networks, UC Davis publishes production guidance and runs a dedicated research center, and state grant programs have supported specialty-crop work. The Council also sponsored AB 2303 and has explored a formal commodity commission framework.

UC Davis guidance notes that agave is native to parts of the Southern United States and provides California growers with information on species selection, heat, frost, pests, disease and agronomic practices. This is the kind of upstream knowledge required for a long-lived commercial crop.
